This Easy Masala Egg Curry is full of delicious Indian spices to make a flavorful, protein-packed meal.
There are definitely some recipes that invoke childhood memories for me.Β (Hint, if you want to skip my childhood memory, feel free to click on Jump to Recipe to go straight to the recipe).Β If you’re still with me, let me continue… We grew up in a Gujarati household that was quite involved in dinner parties and it seemed like every week, we were either attending one or hosting one. Β The evening would begin with the adults chatting, laughing, and catching up with each other on the week’s events. Β The kids would be running up and down the stairwells of the apartment building, playing a game of hide-and-seek or tag.
One of the things I remember most and chuckle about now is that right before dinner time, the kids were responsible for laying out newspapers all across the living room floor. Β This would serve as our “tablecloth”. Β This is where the moms would bring out all the food from the kitchen and serve everyone. Β This is also where everyone would sit down in a big circle to eat their dinner while carrying on their conversations.Β As a matter of fact, Indian families eat on the floor so this was nothing out of the ordinary. Β I chuckle because of the practicality of eating on a “newspaper tablecloth”. Β It definitely made cleanup an easier task for the kids. Β We just simply threw the spoiled newspapers out, ran the vacuum over the floor and the living room was back to normal again.
The other thing I remember about the dinner parties we hosted is an appetizer my mom typically made called Masala Egg Curry (Eenda Nu Shaak. In fact, I have now incorporated that as a meal for dinner for my own family, served on a bed of (you guessed it) Quinoa. Β It is nutritious and light yet packed with wonderful Indian flavors that definitely have a kick to them.
Masala Egg Curry Ingredients
This Easy Masala Egg Curry Recipe incorporates a tomato onion-based gravy. With the addition of garlic, ginger, and traditional Indian spices like turmeric and garam masala, this dish takes boiled eggs to a whole other level!
How to Make Easy Masala Egg Curry
This Easy Masala Egg Curry Recipe has three main steps.
1. Boil the eggs.Β
For a quick tutorial on how to boil eggs, including the amount of time to let the eggs rest in boiling water, check out How To Boil Eggs by The Stay At Home Chef.Β For this Masala Egg Curry, you’ll want to let the eggs cook for about 8-10 minutes.
2. Make the masala gravy (or curry).
Firstly, we’ll saute chopped onions and tomatoes in avocado oil until the onions are translucent and the tomatoes are softened.Β Secondly, we’ll add garlic, ginger, paprika, red chili powder, salt, turmeric, and garam masala and let the flavors incorporate.Β Lastly, we’ll add water and stir occasionally to make sure the gravy does not stick to the bottom of the pan.
3. Add the boiled eggs to the gravy.
The final step is to cut the boiled eggs in half and add them to the gravy. You can add water to the gravy as needed based on the consistency you prefer.
Easy Masala Egg Curry Recipe
Ingredients
- 8 eggs, boiled
- 1 tbsp avocado oil
- 1 whole onion, finely chopped
- 2 small tomatoes, finely chopped
- 2 cloves garlic, crushed and finely chopped
- 1 tbsp ginger, finely grated
- 1 Β½ cups water, adjust as needed
Spices
- 1 Β½ tspn paprika
- Β½ tspn red chili powder
- Β½ tspn turmeric
- 1 tsp salt
- Β½ tsp garam masala
Instructions
Prep
- Boil and peel eggs
- Cut eggs into halves
Steps
- Heat avocado oil
- Saute onions until translucent.
- Add tomatoes and saute until soft.
- Add garlic, ginger, spices and water. Mix and let simmer for approximately 5 minutes.
- Gently place the boiled egg halves into the gravy and simmer on low heat for approximately 5 min.
- To serve, garnish with a sprig of cilantro and a sprinkle of garam masala.
How to Serve Masala Egg Curry
There are many ways to enjoy this Easy Masala Egg Curry Recipe.Β Like I said earlier, my mom used to serve Masala Egg Curry as an appetizer that didn’t contain as much liquid gravy.Β You could simply eat it with a fork by dipping it into a Cilantro Chutney.
I like to serve this Masala Egg Curry on a bed of Quinoa or Quinoa Khichdi to add a boost of nutrition.
