Can an authentic Indian recipe, one that has been passed down through the generations, one that marries Indian spices with plant-based protein-packed lentils, one that provides a hearty, delicious vegan meal… be so quick, simple, and adaptable to a modern appliance like the Instant Pot?Β I say, if it wasn’t, I probably wouldn’t be making it!Β And that’s why I love this vegan mixed lentils recipe for Chevti Dal, also known as Trevti Dal.
Chevti Dal (also known as Trevti Dal) originates in the state of Gujarat, India, where I was born.Β It is a simple, vegan recipe that incorporates three different types of lentils (moong dal, urad dal, and chana dal) with authentic Indian spices.Β This recipe is near and dear to my heart because it invokes memories of walking into the house after school to the sight of my Ba (my mom’s mother) cooking dal (lentils) and the accompanying aromatic smells of savory Indian spices.
The main concept behind Chevti Dal is to cook three varieties of dals with Indian spices. And it is as simple as it sounds.Β The three dals that my grandmother used in her Chevti Dal were mung dal, urad dal, and chana dal.Β However, I have seen recipes out there using tuvar dal and masoor dal also.Β In fact, I will change it up on occasion.
In this vegan recipe, I use the Instant Pot’s ‘Saute’ and ‘Bean/Chili’ functions to cook my Chevti Dal.Β The ‘Saute’ function allows me to temper oil, which is essentially heating oil.Β I then add freshly grated ginger, finely chopped garlic, and thinly sliced green chilis to the heated oil.Β Then, I add the washed mixed dals, water, salt, and turmeric.Β I then switch over to ‘Bean/Chili’ mode and set the timer to 15 minutes, with the valve to the ‘Sealed’ position.
Once the IP beeps to indicate that the cycle is finished, you can choose to allow the Instant Pot to naturally vent if you plan on eating the Chevti Dal later.Β Or, if you’re in a hurry, simply move the valve to the ‘Venting’ position to manually release the steam (be careful here since the steam will come shooting out of the vent)Β I’m not kidding, it really is as simple as that!
I like to garnish my bowl of Chevti Dal with green onions and cilantro.Β Chevti Dal pairs nicely with cooked vegetables like cauliflower, broccoli, zucchini, and eggplant.

Gujarati Instant Pot Chevti Dal | Vegan Mixed Lentils Recipe
Equipment
- Instant Pot
Ingredients
- 1 tbsp avocado oil
- 4-6 cloves garlic, minced
- 1 tsp ginger, grated
- 2-5 green chilis, sliced lengthwise
- Β½ cup yellow mung (moong) dal
- ΒΌ cup urad dal
- ΒΌ cup chana dal
- 1/2 tsp turmeric
- 1 tsp salt
- 5 cups water
- 1/2 tsp garam masala
Instructions
- Set Instant Pot to 'Saute' mode.
- Add avocado oil, garlic, ginger, and green chilis.
- Wash all three dals (lentils) and add to Instant Pot.
- Add water, salt and turmeric and mix well.
- Close the lid on the IP. Press 'Cancel' and then 'Bean/Chili' mode and set timer to 15 minutes.
- Move valve to 'Sealing position'.
- Once timer beeps, Naturally Release. Sprinkle garam masala for light spice flavor.
Notes
- Β Feel free to play around with different types of dal.Β However, make sure you keep the proportion of urad dal similar to above to maintain consistency.
