Now, don’t get me wrong.Β I do love a cheesy alfredo. My favorite is to add a dollop of homemade basil pesto that adds a wonderful dimension to this dish! And sometimes, I’m in the mood for a non-dairy-based sauce.Β So, in my quest to “veganify” some of my favorite dishes, I decided to dabble in creating a more nutritious, guilt-free version of alfredo sauce.
Vegan Alfredo Sauce Recipe Ingredients
This vegan alfredo sauce recipe uses simple, clean ingredients and is completely plant-based.
The main ingredient in this vegan alfredo sauce recipe is cauliflower.Β When you boil and blend cauliflower florets in vegetable broth, it gives this vegan alfredo sauce a nice mild flavor with the creamy texture of alfredo sauce that we have all grown to love.
It has a wonderful pop of garlic with a delicious, savory cheesy flavor from the nutritional yeast. It also has a rich creamy texture from the cauliflower.
What Is Nutritional Yeast, anyways?
Nutritional yeast is actually a species of yeast called Saccharomyces cerevisiae. It hasΒ a cheesy, nutty flavor that is the perfect substitution for traditional dairy-based cheese.Β It’s actually my secret ingredient to making vegan-anything! I use it in my vegan cashew cheese, vegan pesto, and a topping on salads and popcorn.Β I love its versatility! Here are some other great recipes to incorporate nutritional yeast!

How To Make This Vegan Alfredo Sauce Recipe
The Vegan Alfredo Sauce Recipe consists of two basic steps.Β First, we’ll do a quick saute of garlic and crushed red chili flakes and add cauliflower florets to boil in the vegetable broth and spices.
Next, we’ll transfer the cooked cauliflower along with the vegetable broth and spices into a blender and blend until smooth and creamy.
And that is it my friends!Β Drizzle that on your favorite variety of pasta and you have one delicious plant-based meal!
The Best Creamy Vegan Alfredo Sauce Recipe
Equipment
- Blender
Ingredients
- 1/2 head cauliflower
- 2 tbsp olive oil
- 6-8 cloves garlic
- 1/4 tsp crushed red pepper
- 2-3 cups vegetable stock
- 2 tbsp nutritional yeast
- salt (to taste)
- black pepper (to taste)
Instructions
- Heat the olive oil and add garlic and crushed chili flakes.
- Once the garlic starts to sizzle, add the cauliflower florets (see note 1 below)
- Add vegetable stock, salt, black pepper and nutritional yeast (see note 2 below)
- Cover the pot with a lid and boil for about 10 minutes, until the cauliflower has softened.
- Carefully transfer to a blender and blend for about 1 minute.
- Top on your favorite pasta variety such as linguine, fettucini or rotini.

- The smaller you cut the cauliflower florets, the faster they will soften.
- Adjust the amount of vegetable stock to get the consistency you prefer.

Mine was super super watery, so obviously to much stock and perhaps my cauli was not big enough to balance it out. I fixed it by adding blanched almond meal and it was a winner with my very very fussy underweight daughter. Son was a fan as well. I did leave out the chilli as she is sensitive to chilli but smiles here.
