I have a few favorite times of the year.Β My birthday is one.Β Navratri, a Hindu festival where we dress up and do our traditional dance until the wee hours of the morning is another.Β And of course, Diwali ranks at the top of my list!
Diwali is one of the most prominent Indian festivals that usually lasts five days. Diyas are lit, homes are decorated and delicious foods and traditional Indian mithai (sweets) are shared with family and friends.Β At the root of the festival, Diwali symbolizes the spiritual “victory of light over darkness, good over evil, and knowledge over ignorance.”
Vegan Carrot Halwa Ingredients
Vegan Carrot Halwa is traditionally made with dairy-based ingredients such as dry milk powder, ghee, and heavy milk.Β These days, with almond flour (meal) and coconut oil, it’s pretty simple to convert a dairy-based recipe to plant-based.Β This recipe calls for:
2 tbsp coconut oil
1 tsp raisins
2 1/2 cup shredded carrots
1/2 cup almond meal (almond flour)
1 1/4 cup almond milk
1/4 cup sugar
1 tbsp vegan butter
1 tsp vanilla extract
sprinkle cardamom and saffron
Substitutions
Here are some alternatives to the ingredient list which will still make for a tasty yet healthy Indian sweet.
Almond milk – Coconut milk or Oat milk
Sugar – Monk Fruit Sweetener
Shredded carrots – Shredded Beets
Basic Steps to Make Vegan Carrot Halwa
Vegan Carrot Halwa is pretty simple to make with just a few basic steps.Β First, we saute the raisins in coconut oil.Β Then we add the shredded carrots to cook until softened.Β Then, we add almond milk, almond flour and spices and reduce the milk until it evaporates.Β A little bit of stirring every so often, and that is it!
Vegan Carrot Halwa Recipe
Ingredients
- 2 tbsp coconut oil
- 1 tsp raisins
- 2 Β½ cups shredded carrots
- ΒΌ cup almond flour
- 1 ΒΌ cup almond milk
- ΒΌ cup sugar
- 1 tbsp vegan butter
- 1 tsp vanilla extract
- sprinkle cardamom powder
- sprinkle saffron
Instructions
- Heat coconut oil on low heat.
- Add raisins and saute until slightly brown.
- Add shredded carrots and cook until softened.
- Add remainder of the ingredients and cook on low heat, stirring occasionally.
- Cook until all the almond milk has evaporated.
- Line a muffin pan with cupcake holders and spoon the cooked halwa into the cupcake holder.
- Serve warm, or refrigerate.
