Ingredients
 

  • 2 tbsp coconut oil
  • 1 tsp raisins
  • 2 ½ cups shredded carrots
  • ¼ cup almond flour
  • 1 ¼ cup almond milk
  • ¼ cup sugar
  • 1 tbsp vegan butter
  • 1 tsp vanilla extract
  • sprinkle cardamom powder
  • sprinkle saffron

Instructions

  • Heat coconut oil on low heat.
  • Add raisins and saute until slightly brown.
  • Add shredded carrots and cook until softened.
  • Add remainder of the ingredients and cook on low heat, stirring occasionally.
  • Cook until all the almond milk has evaporated.
  • Line a muffin pan with cupcake holders and spoon the cooked halwa into the cupcake holder.
  • Serve warm, or refrigerate.
