Ingredients
 

  • 1/2 head cauliflower
  • 2 tbsp olive oil
  • 6-8 cloves garlic
  • 1/4 tsp crushed red pepper
  • 2-3 cups vegetable stock
  • 2 tbsp nutritional yeast
  • salt (to taste)
  • black pepper (to taste)

Instructions

  • Heat the olive oil and add garlic and crushed chili flakes.
  • Once the garlic starts to sizzle, add the cauliflower florets (see note 1 below)
  • Add vegetable stock, salt, black pepper and nutritional yeast (see note 2 below)
  • Cover the pot with a lid and boil for about 10 minutes, until the cauliflower has softened.
  • Carefully transfer to a blender and blend for about 1 minute.
  • Top on your favorite pasta variety such as linguine, fettucini or rotini.

Notes

  1. The smaller you cut the cauliflower florets, the faster they will soften.
  2. Adjust the amount of vegetable stock to get the consistency you prefer.
**NOTE: Recipe adjusted on 10/5/20 to decrease the amount of vegetable stock for an overall thicker consistency.
